Pear and Parmesan Salad

Serving size: Serves 2
Cooking time: Less than 10 minutes

INGREDIENTS

  • 1 bunch rocket leaves, trimmed
  • 1 red oak lettuce, leaves seperated
  • 1 witlof, trimmed
  • 2 small Corella pears, cored, thinly sliced
  • 1/3 cup shaved parmesan cheese
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon dijon mustard
  • 4 slices of prosciutto
  • Raspberries to serve

METHOD

    1. Place rocket, lettuce, witlof, pear and parmesan in a bowl.
    2. Place oil, vinegar, honey and mustard in a screw-top jar. Secure lid. Shake to combine. Add to rocket mixture. Toss to coat. Serve with raspberry on top.

NB: Why not try a packham pear instead of corella pears.
